Description

Indonesia is now the world's 4th largest coffee producing country. Coffee was introduced to Sumatra, the Netherlands’ Indies (N.I.) westernmost island, in 1888, in Lake Toba, which fills a vast volcanic caldera in the hilly Northwest region of North Sumatra. At 505 meters (almost 1660 ft.), Toba is considered one of the world's deepest lakes. The coffee producing area is a high plateau notable for the richness of tree fern species. It is regarded as an excellent place for the development of Arabica coffee by those who produce Indonesian coffee.

Tasting Notes: Sumatra Coffee is cultivated and is recognized for its smooth and thick body, which has been characterized as syrupy at times. The greatest Sumatran coffees have a mild acidity, yet just enough to bring intrigue to the complex flavors. It frequently shows rich sweet chocolate tones, as well as hints of licorice and other spice-based aromas. It's worth noting that spices in this context often relate to herbs like cinnamon, nutmeg, and cardamom.

Roasting Notes: Indonesians coffee beans are frequently over-roasted. The reason for this is because they don't have as much roast color and have a patchy appearance up to the 2nd crack and even farther into it. Avoid letting this fool you into thinking you need to roast them black. Great Indonesians will be delicious roasted just to the brink of 2nd crack but not into it.
